Tai Johnson-Spratt, Adjunct Instructor
Tai Johnson-Spratt is an accomplished pastry chef and dedicated educator, currently serving as an Advanced Baking Chef Instructor at ICI/DMACC and as a pastry chef at Embassy Club West. An alumna of the Iowa Culinary Institute and Southwestern College, Tai combines a passion for culinary arts with a commitment to nurturing the next generation of chefs. As a proud member of the American Culinary Federation and Les Dames d’Escoffier, Tai is deeply engaged in the culinary community and dedicated to promoting the advancement of women in the industry.
In addition to her teaching and culinary roles, Tai previously founded a successful business that grew so popular it expanded to a factory in Zhu Hai, China. This entrepreneurial venture showcased her exceptional skills and creativity in the arts field, allowing her to reach a global audience.
Having lived in 16 states, Tai’s diverse experiences have enriched her culinary perspective and fueled her love for travel. This adventurous spirit extends beyond the kitchen, as she enjoys a variety of hobbies including smoking meats in her smokehouse, quilting, skydiving, and scuba diving. A motorcycle enthusiast, Tai also finds joy in training her two therapy dogs, sharing the love and comfort they bring to others.
For seven years, Tai participated in the downtown Des Moines Farmers Market, showcasing her poultry and connecting with the local community. Her unique background also includes raising a variety of poultry, from quails to emus, reflecting her passion for sustainable and hands-on food practices.
With a blend of culinary expertise, entrepreneurial spirit, adventurous pursuits, and a commitment to community, Tai Johnson-Spratt continues to inspire those around her in both her personal and professional endeavors.
