About
Currently, Dorothy is the Lead Corporate Dietitian with ABCM Corporation since 2004 for their 31 homes and 24 assisted living facilities. Some of her main responsibilities are coordinating the ​corporate menu system, all dietary procurement, mock survey program, and regulatory management in food service and nutrition care. She is also a Serve Safe Certification Instructor.

Previously, she had been with the State of Iowa-Department of Inspections and Appeals as a Health Facilities Surveyor-Dietitian, Mary Greeley Medical Center, ARAMARK, and Madrid Home in various management and dietetic roles, and worked independently at other facilities within Iowa.

About
Chantel Mullihan is a Registered and Licensed Dietitian. She is a 1995 graduate of Iowa State University with a Bachelor’s of Science in Dietetics. She has had a variety of challenging and rewarding career opportunities over her 20+ years of working as a dietitian. The majority of her career has focused on disease management through nutritional therapy and providing healing and better life quality through proper nutritional care. Her work experiences include: Public Health Dietitian, Renal Dietitian working with dialysis patients, Diabetic and cardiac care dietitian and consultant dietitian for Rehabilitation and Nursing care facilities. In addition to disease management care, she enjoys working closely with her dietary managers and kitchen staff at the Rehabilitation and Nursing care facilities, providing guidance to ensure safety and sanitation in the kitchen, along with high quality and nutritious meals. She brings many years of career experience and expertise to her students.

About

Jessica is the current dietary director for Urbandale Health Care Center. She is a 2000 graduate of Iowa State University with a BS in Community Health Education with a minor in Gerontology. With over 18 years of dietary management experience, she dedicates her time to enhancing the residents' dining experience on a daily basis by focusing on personal preferences, nutritional needs and food presentation. Her goal is to provide the residents of her facility the highest quality food and service in the industry. With a dual approach of teaching and leading a team to meet these goals, Jessica is able to lead by example to her staff and students regarding the proper food production techniques.​

About
Barbara Thomsen CDM,CFPP, RAC-CT, ICAC is an active Certified Dietary Manager/ANFP member, serving on both the National Certifying Board and State Chapter boards/committees.   Barbara is a 15+ veteran Long Term care CDM/CFPP. She has shared her regulatory knowledge across the nation with other ANFP State Chapter meetings, District/National Sessions as well as state Health Care Associations seminars.  She has been published in numerous Long Term Care Publications as well as authored various Nutritional Manuals/Guidebooks. Barbara has been an adjunct instructor for the DMACC Dietary Manager Course for the past few years, preceptor and mentor. Recently Barbara successfully organized and lead DMACC's first CDM Exam Prep session.
