Students from the
Iowa Culinary Institute™ (ICI™) at DMACC will prepare French cuisine for a Julia Child-themed dinner as the
Des Moines Metro Opera performs
Bon Appétit: The Art of French Cooking at the DMACC Ankeny Campus.
For three nights, the Des Moines Metro Opera will perform Lee Hoiby’s
Bon Appétit while acclaimed mezzo-soprano Joyce Castle portrays the charismatic Chef Julia Child, who introduced Americans to French cuisine in the 1960s. In this unique partnership, the opera performances will be paired with a French dinner on
Thurs., July 18th; Fri., July 19th; and Sun., July 20th at the ICI located in Bldg. #7 on the DMACC Ankeny Campus.
The reception starts at 6 p.m. each evening followed by the French buffet beginning at 7 p.m. and the opera starting around 8:15 p.m. In the 20-minute opera, Castle, who portrays master chef Julia Child, prepares the batter for
Le Gateau au Chocolat ‘Eminence Brune.’ Following the opera, the ICI students will serve this delicious chocolate cake to the patrons.
“A total of 50 ICI students have been researching how to prepare the Julia Child-themed dinner,” said Chef John Andres, Director of the Iowa Culinary Institute at DMACC. “The students are excited to demonstrate their culinary skills in this unique partnership.”

Asperges et Tomates en Vinaigrette
Suprêmes de Volaille aux Champignons
Cheese Soufflé with essence of Truffle
Rice Pilaf with Summer Vegetables
Le Gateau au Chocolat ‘Eminence Brune’
French wines will also be served during each course of the meal. An elaborate kitchen setting is being built in the recently remodeled ICI building. Tickets for the sold-out show were $150 per person, with dinner and wine included in the ticket price.
Iowa Public Television will be livestreaming the performance on
Thurs., July 18th, to an audience at the IPTV Studios Maytag Auditorium at 6450 Corporate Drive in Johnston.
